Rustic Apple Tart and Blackberries







I know I should probably be making something with the fabulous peaches that are now available at the local orchard, but I was craving an apple dessert. I decided to keep it simple and throw together a rustic Apple Tart.



I used one of my favorite go-to ingredients, puff pastry (I always have some in the freezer). It makes a wonderful flakey crust. Remember the Cherry Cream cheese Danish?


Well this one was just as easy.



1. I just thawed the pastry and rolled it out a bit, placing it on a parchment lined cookie sheet.




2.Peeled, cored, and sliced 2 grannysmith apples and layed them in a pretty pattern.



3.Rolled up the outer edges of dough.



4.Then sprinkled the apples with a 1/4 cup of sugar and dotted with a 1/3 stick of butter. Because I had some beautiful blackberries from the garden, I added a few to the center.



5. Baked in a preheated 400 degree oven for about 45-50 minutes.



6. In a small pan, I heated a couple of tablespoons of apricot preserves thinned with a little water, and brushed the top of the tart when it came out of the oven. (you could also use orange marmalade).




We had ours with vanilla ice cream. Yum!



And here are those gorgeous blackberries. They were on the property when we bought the new house. There are so many, we've been freezing some of them.

Oh, this looks wonderful! I must admit, peaches are my favorite fruit...but I would yum down this apple tart in a New York minute!

And your blackberries are perfect! I just discovered blackberries this year. I don't know why I never tried them before...they're awesome! I'm looking into planting a few bushes in the back garden...along with some raspberries (another new addiction). Berries rule!

That looks DELICIOUS!!! We will have to whip one of those up soon. YOu are so lucky to have blackberries on your property and they are so big! Our Little Guy loves them, but we have deer in and out of our yard regularly, so I don't think we would get much if we planted them here. We found some along the parking area of the playground just down the street (it backs up to a wooded area) and he went bonkers picking and eating. Now every time we run an errand and pass the park he yells, "Park! Blackberry!" It's so funny.

This looks really good, and a perfect way to use some of our blackberries. I only wish our apples were ready now as well. I am definitely going to try this soon-and with ice cream too!

Kathy, I think it would be great with peaches, too. And if you plant blackberries, make sure to get the thornless bushes.

Erika, We have lots of deer, too. They haven't bothered the berries much (the peaches are another story) The biggest problem is the birds. But there's enough to share...they pick the ones on top and we get everything else. :-)
